  • Production method ; Crushed into 4T fermenter,48-hour pre-ferment soak. Inoculated ferment in 1/2 and 1 tonne open fermenters, hand plunged 3-times daily. Pressed off skins into stainless steel tanks at 2-3 ˚Bé for completion of primary fermentation. Transfer into oak for inoculated MLF before racking off lees and further barrel maturation. Cross-flow filtered to preserve fruit freshness.
  • Tasting note ; Pure red cherry and blackcurrant aromas follow with mixed red berry flavours.
    The fresh fruit flavours linger with an elegant and soft tannin structure.
  • Drinking window ; Drink between 2013 and 2015
  • Serving suggestion ; Went well with Italian pork sausages and polenta.
  • Serving temperature ; 14ºC

とにかくフルーティ。香りは甘いいちごのようで、味わいはまろやかで果実の甘みを感じる。
タンニンのおかげか甘ったるくはなく肉料理ともあわせやすい。

Bream Creek Tasmania

Boutique Wines :: Bream Creek Vineyard
Bream Creek Vineyard is planted on a north-east ridge above Marion Bay on the edge of the Tasman Sea. This gently sloping site, coastal location and maritime influence, result in growing conditions that are characterised by long mild seasons to create premium fruit quality. The vineyard enjoys a cool frost free spring, long sunny summer days with sea breezes and an extended autumn ripening period. Surrounded by neighbouring forest and windbreaks, the vineyard is nicely sheltered from strong and cold winds producing crisp cool climate wines.

Soils are deep and range from brown to black clay loams with a little small stone on the higher ground. Particular attention has been made to match varieties to the different range of soil types within the vineyard to produce premium boutique wines. The site features a large dam which is used sparingly for trickle irrigation.

  • Production methodaged ; Oak is primarily French with 30% new barrels; however we also use a small number of American oak hogsheads. Following Malolactic fermentation then wine is left to mature in barrel for 16 months.
  • Tasting note ; Bright crimson with a hint of purple. Lifted and bright with ripe fruit reminiscent of raspberry, blackberry and plum supported by notes of violet, spice and vanilla. A traditional cool climate style with a mid weight, elegant palate showing dark berry fruits, sweet vanilla oak and a long, structured finish
