• Production method ; Crushed into 4T fermenter,48-hour pre-ferment soak. Inoculated ferment in 1/2 and 1 tonne open fermenters, hand plunged 3-times daily. Pressed off skins into stainless steel tanks at 2-3 ˚Bé for completion of primary fermentation. Transfer into oak for inoculated MLF before racking off lees and further barrel maturation. Cross-flow filtered to preserve fruit freshness.
• Tasting note ; Pure red cherry and blackcurrant aromas follow with mixed red berry flavours.
  The fresh fruit flavours linger with an elegant and soft tannin structure.

• Serving suggestion ; Went well with Italian pork sausages and polenta.

• Tasting note ; medium to deep garnet-purple color and aromas of kirsch, creme de cassis, baking spices, potpourri, mulberries and black pepper. Full-bodied with plenty of ripe, spice blackberry flavor, it has a good backbone of crisp acid and medium level of velvety tannins, finishing long with some vanilla coming through.

Extended maveration to enable good tannin development so the wine is soft and approachable early. 10-20% barrel fermentation for selected batches. due to perfect fruit & vintage conditions, a portion of new French oak was used for maturation.
• Tasting note ; Deep saturated purple in colour. The note is lifted, pure and expressive. Dark stone fruits, cedar and spice intermingle with hints of cloves and espresso. The palate is finely crafted, good density of mouthfeel with a lightness of weight. Savoury tannins round out the finish making thins Bishop an ideal food wine.
