• Production method ; Four-day cold soak, five-day ferment with hand plunging two times per day in small two-tonne fermenters, then run off to oak. The wine underwent malolactic fermentation in barrels – 80% French and 20% American, with about 80% new.
• Tasting note ; Glossy. Deep red with a magenta rim. Varietal berried fruits laden with a spray of exotic spices from afar. Scents of red apple skin (Fuji, Pink Lady ?) and cold cured meats propelled. French oak makes a late appearance … a sesame/tahini guise, not that of cedar. Plush. Plummy, Persuasive. Convincingly Barossa by birthright and Penfolds by style: blueberry/ plummy fruits avec juniper; custom-built, trademark rich mid-palate. Charcuterie, cold (Polish) meat artefact that may well be Shiraz fruit-derived; moreover, peat/coal dust undertones that have, without doubt, been acquired courtesy of the oak and time. Tannins and a buoyant and balanced acidity court a long and persistent finish.

• テイスティング ; つややかな深い赤色。ディスクはマゼンタ。多様なベリーに重なるようにかすかなエキゾチックなスパイスの香り。フジやピンクレディーといった赤いりんごの皮と突き出るような燻製肉の香り。シダーではなくゴマのようなフレンチオークの香りが遅れてやってくる。ブルーベリー、プラムとジュニパーがマッチし豊かな味わいとなっている。オーク樽での熟成が成すほのかな炭の味わい。タンニンと小気味よいバランスの取れた酸味で味わい深い余韻がつづく。

• Production method ; During fermentation on skins, temperatures were carefully controlled between 18-28°C for periods up to 15 days to ensure optimal colour, tannin and flavour extraction from the skins. The key components were then drained and pressed into a range of carefully selected new and used French and American oak barrels, in which they underwent malolactic fermentation. These components were matured in oak for up to 20 months.
• Tasting note ; Full in depth and bright crimson in hue. Richly perfumed and aromatic, with intense dark berry fruits, hints of black pepper spice and sweet vanillin oak. A rich core of ripe black fruits, layered subtly with black pepper and restrained, stylish oak, supported by softly textured fruit tannins and concluding with a long, savoury finish.

• Tasting note ; Excellent mid to deep colour with bright purple tints on the rim. Strong lifted fruit aromas of red cherry and sweet earth. As a young wine the oak (nearly all French) is up front with briar-like bramble characters and vanillin sweetness. The Hunter savouriness continues on the palate. Lively red fruit characters supported by fine grained tannins from both the fruit and oak.

• Production method ; The fruit is cold-soaked for 3 days prior to initiating fermentation. Once fermentation begins, each tank is punched down two to three times per day to maintain consistent contact between the must and pommace throughout fermentation. Once the wine is fermented dry it is racked to barrels for completion of malo-lactic fermentation. The wine is aged 9 months in 100% French oak of which 15% is new.
• Tasting note ; The Carneros Pinot Noir is medium-bodied with cherry, strawberry and plum; surrounded by light toast flavors. On entry, the wine displays blue fruit characters that are balanced with spicy and earthy notes that frame the mid-palate. The vanilla and toast integrates well with the silky round tannins on the lengthy finish.
